Once upon a time there was a bartender named Joe.  Joe was an avid home cook, and extremely conscious of where the food he fed his family came from. Everyday Joe searched for the best unprocessed ingredients from local, and regional food companies. One day during a bout of unemployment Joe came across a local miller that was freshly milling semolina flour. Because of that Joe dug into his Italian roots, and made the transition from bartender to business owner, and pasta maker.  Because of that Joe found the best flour millers the North American west coast has to offer.  now Joe has an Artisan Pasta company producing pasta a cut above the rest.
